Korean beef stew
This is an old family recipe that has always been one of my favorite dishes my grandmother use to make. My whole family loves this korean dish it is
Braised beef short ribs -In Korea it is called Makgalbijjim .
As this being on the top of my list when it comes to flavors and taste I had to get the recipe and try to make it just like hers. It’s always nice to keep family traditional recipes so you can carry it on to the next generation. The secret of this stew is the slow cooking time. Keeping it in a low simmer allows the meat to soften without falling apart or burning, meshing with the flavors of the sauce. Believe me by the time it’s done the beef just melts in your mouth and the sauce !!! I swear , it’s worth fighting for. I could never get tired of making this dish . ❤
I have attached a photo of the key ingredients you would need and a list below :
-1 kilo of stewing beef with bones (short ribs, neck or shank), cut into serving pieces
– 1/2 c. of Kikoman soy sauce
– 3/4 c. of white sugar
– 2 tbsp. roasted sesame seeds
-4-5 pcs. star anise
– Dried shiitake mushrooms
– spring onions
Place the beef in a casserole. Cover with water. Place over high heat and, before the water starts to boil, remove the scum that floats on the surface. Add a 2-3 whole stalks of the spring onion, the star anise, the dried mushrooms, Pour in the soy sauce and stir in the sugar. Simmer gently for at least 3-4 hours or until the meat is very tender. If you’re using short ribs, the meat will be falling off the bones.
Halfway through the cooking, taste the broth and add salt. Do not be tempted to add more soy sauce instead of salt; otherwise, the broth will turn too dark.
While the beef simmers, roast the sesame seeds. Place them in a small frying pan and set over medium-low heat. Shake the pan often for even toasting. Roasting sesame seeds releases the flavor of the seeds and gives it a nice roasted flavor when you bite on them. Try it!
Serve the dish on a plate or bowl and sprinkle the sesame seeds on top, together with some finely chopped spring onion.
