Beef Bone Marrow Soup
FINALLY !!! I get to share this
step by step recipe. This is one of my favorites, Bulalo Soup or Filipino Bone Marrow Broth, which is surprisingly simple and unbelievably delicious! By the way there are different ways of making this depends on what you like. Traditionally, they add corn it in. I used carrots and potatoes. It’s really whatever you prefer, what’s important is the flavor of the bone marrow. 😍
Here are the basics of what I used for my bulalo recipe :
The Ingredients I used :
-beef shank or (ideal 50/50 bones/shank)
-cabbage chopped in 2-2 pieces depending on size.
-5 leaves bok choi
-2 onions, sliced
1 teaspoon whole black peppercorns
salt to taste
3 cloves garlic
2 potatoes peeled and cut
2 carrots peeled and cut
2-3 tablespoons patis (fish sauce)
3 pcs calamansi to add a mild sour taste.
1 beef broth cube
In a large stockpot, bring the beef, onions, peppercorns, patis, broth cube and water to a quick boil. Skim the foamy impurities off the top when the stock starts boiling. When the stock gets clear, reduce the heat to a low simmer, cover and leave to cook for 3-4 hours or 90 minutes in a pressure cooker or until the meat is very tender when pricked with a fork, falling off the bone.
Once the beef is soft add chunky pieces of potatoes and carrots
Once potatoes and carrots are cooked, takes about 15 minutes~ taste for seasoning and add salt or fish sauce to taste. Remove pot from heat then add the bok choi and cabbage to wilt. Serve immediately.
