Today i will be sharing with you, one of my favorite Filipino comfort food recipes, called beef Kaldereta or Caldereta, but it’s not just any Caldereta, It has to be my grandmothers Caldereta. It always hits the spot for me every time I crave for it. 😊 This is a popular local dish served during special occasions, I personally like it on a rainy day, and it is definitely a regular dish in every Filipino cookbook. In case you are wondering what this is made of ? It is a hearty stew dish using beef, you may also use Chicken, or pork if you don’t eat meat. Caldereta is combined with potatoes, carrots, on a tomato base sauce. The secret to this recipe is actually liver spread! Now If you are not a fan of liver spread don’t worry, I promise you will NOT taste it at all. I use to try to make this a few times but it never turned out as great as my grandmothers recipe up until recently. I finally asked her how she made it taste soo good and when she shared her recipe, I just HAD to make it.
After tried and tested I finally got it on point! Yay! 😊 I decided to share with all of you a STEP BY STEP procedure on how to make it, so you can’t go wrong. Feel free to ask me any questions or drop me an email and il be sure to get back to you ASAP.

The photo below are all the ingredients I used to make it:
1 lbs beef, cubed or ( Beef Short ribs is even better )
3 garlic cloves, crushed and chopped
1 onion, finely chopped
5 cups water
1 cup red bell pepper, cut into strips
1 cup tomato paste
½ cup liver spread
2 cups potatoes, sliced
2 cups carrots, sliced
⅔ cup green olives
2 Sweet Pickles chopped
Salt and pepper to Taste – however if you marinate the meat, you will not really need to add much salt anymore.
1st Step is to Marinade the beef:
(you will have to marinate the Meat with Soy sauce and Garlic Over night to get the BEST flavor.)
HOW TO COOK :
1.) Heat the cooking oil in the pan, sauté the garlic and onions
2.) Add the beef and simmer for 5 minutes make suer the beef is Brown.
3.) Add your tomato paste, liver spread, water, green olives, bell pepper, and sweet pickles.
👆👆 Now this is what it’s going to look like. After adding everything above, cover and let it simmer on low heat for about 2-4 hours. I like to cook mine for 4 hours so I get the meat literally Falling off the bone. 😉
4.) Add the Carrots, and potatoes last, and let it simmer for about 5 to 10 minutes. You can see the sauce is thick now. 👍
And it’s Done !!!
Best served HOT
